lNDUSTRIAL SYSTEMS
A constant climate control for the proofing and chilling or resting of dough balls is crucial for the quality of your baking products. The industrial systems guarantee a constant climate in the whole system achieving the highest product quality. For proofing units and chilling tunnels a ventilation system is used in order to ensure the desired temperature and humidity during the whole fermentation time:
PROOFING UNITS
Our Partner proofing units can be designed and manufactured as the housing for available climate control systems but also for new climate systems of any manufacturer. Thanks to the special arrangement of their ventilation splits in
the lateral walls the air distribution is constant, providing a high air flow and a low air speed along the entire system. Heating, moistening and chilling of the units takes place simultaneously. This allows for low relative fermentation
temperatures also with elevated outside temperatures. In each situation the air humidity can be set separately (moistening and dehumidification). At the same time, the large evaporation surface ensures a high level of relative air
humidity which avoids effectively that the dough dries out or skin formation.

There are different types of proofers:
- For wheaten long loaves
- For rye, wheaten and rye-wheaten long, oval and round loaeves
- For speciality products baked on trays
- For pan bread and products baked on baking trays

RETARDING/PROOFING DRIVE IN & THROUGH WITH ULTRASONIC TECHNOLOGIES

Ultrasonic oscillation electronics produce acoustic waves (frequency range of ~1,7MHz) that are transferred to an oscillator (piezo element) located at the bottom of the humidifier under a water reservoir. The oscillation causes the finest of aerosol droplets to separate mechanically from the surface of the water (the water was subjected to reserve osmosis for purity and softening). The very small diameters of the droplets (approximately 1-2 µm) allow fast evaporating and mixing with the environmental air. This technology allows a very high relative humidity to be produced mechanically (100 %) at comparably low temperatures (e.g. between -20 °C and +35 °C).
The ultrasonic humidification has a lot of advantages. The tiny water droplets that are introduced into the proofing chamber by a targeted air steam evaporate almost immediately and thus increase the relative humidity up to 100% or whatever desired relativ humidity. There is no condensation since the temperature of the droplets is the same as the ambient temperature. This new technology also allows better control of microbiological and hygienic problems associated with condensate formation in conventional proofers, proofing retarders or proofing interrupters.
REGULAR RETARDING/PROOFING DRIVE IN & THROUGH
FERMENT AND RETARD

A fermentation delay cell is used for cooling and has a temperature range of -5°C to 40°C. The relative humidity ranges between 70% to 85%. It has a DE Air ducting system: airflow via speed-controlled fans behind the pressure wall under the carriages for a homogeneous climate that is gentle on the product at all run levels
STORE DOUGH

A dough storage cell is used for cooling as well as freezing and has a temperature range of -25°C to 0°C. The relative humidity is 90%. It has also a DE Air ducting system.
AUTOMATIC FERMENTATION

An automatic fermentater is used for cooling, freezing and fermentation and has temperature range of -25°C to 40°C. The relative humidity ranges between 50% to 99%. It has a DEWA Air ducting system.

PROOFING ONLY DRIVE IN & THROUGH

COMPACT CONTROL FOR STANDARD CLIMATE SYSTEM OR TOUCH PANEL CONTROL FOR AIRFLOW SYSTEM
The climate control regulates the humidity and temperature in the proofing room through separate controllers. The control system is the cost-efficient variant with excellent properties for all standard proofing chambers.
The SPS-control with operating console has been developed for the customized operation of proofing chambers with specific functions such as a transport unit, an additional chilling unit or exact climate control operat ion. Furthermore, several climate zones are implemented for the SPS-control of proofing units. The freely programmable controller enables the technical conversion in accordance with nearly all technical requirements for climate control.
FEED-IN PROOFING UNITS
Feed-in proofing units are designed for oven racks and bread trolleys aimed at aconstant proofing climate control in an insulated cell. The stainless steel surface of the cells allows the customization to your requirements already during manufacturing. Next to wing doors also electrical high-speed doors are implemented in the cells. The ram protection in the proofing chamber consists of a PE-plastic bar which is directly mounted onto the proofing chamberwall. Optionally, a massive stainless steel ram protection can be constructed.


HIGHLY EFFICIENT CONTINUOUS FEED UNITS FOR CONSISTENT CLIMATE CONTROL
Continuous feed proofing units are designed for a continued proofing process of oven racks and bread trolleys. The construction and insulation of the proofing chamber cells matches the feed-in proofing units. We distinguish between the continuous feed proofing units for the manual sliding through the oven rack and a version with automatic transport via the chain conveyor. These units are equipped with wing or high-speed doors at the front side.
STANDARD CLIMATE CONTROL SYSTEM
In order to achieve optimum temperature and humidity values, the climate con-trolling device suctions the air via the ventilation slits at the top where it is heated or moistened according to the requirement. The double radial ventilator blows the air-conditioned air downwards through the proofing trolley where it hits the opposite chamber door or wall. This provides a constant air circulation in the proofing compartment and offers an optimal environment for your product. The entire housing of the circulation device is made of stainless steel. For larger proofing chambers the climate control system is expanded with additional air circulation devices according to the chamber volume. For this purpose, the climate control system can be adapted individually with additional modules.
OPTIMAL VENTILATION SYSTEM
For a constant distribution of air, the ventilation system is provided with lateral slotted plates. The special arrangement of the ventilation splits in the lateral walls provides the constant distribution of air, with a high airflow and a low air speed over the entire system length. In order to achieve lower temperatures and extended proofing times, the ventilation system can be expanded with optional chilling units. This is especially required, when environment temperatures higher than the proofing temperatures are present during production. This may occur with the implementation of a larger oven or with temperature oscillations.
